Swirl Lollipops

Lollipops are an american icon, being basicaly hard candy on a stick a lollipop can be molded into a variety of shapes colors and sizes. To start making your own swirl lollipop start with this mixture. Make a basic candy recipe by mixing one cup of sugar, 1/3 cup of white corn syrup and 1/2 cup of water in a heavy saucepan, heat until it reaches 280 degrees. Remember to keep stirring the mixture, then reduce heat and continue heating until it reachs 300 degrees.

Remove from heat and let cool until about 265 degrees.when the candy stops bubbling you are ready to add the flavoring and the color. Don’t stir it to much just enough to add the flavor and the color evenly.

Take a metal baking sheet and flip it upside down cover with foil and put the molds for the lollipops on top. Spray the molds with a non-stick baking spray. When the candy stops boiling pour it into the molds, as it cools and hardens add your sticks. When they are throughly cooled pop them out of the molds and enjoy your own big swirl lollipop.
